This is probably the most famous Italian dish, however, perhaps for the wrong reasons. Maybe we can get away with telling ourselves "every family has their own recipe", but in reality there is only one, and it's registered with the Chamber of Commerce in Bologna, Northern Italy. That's how we make our Bolognese at Ripiena: how it was intended, and with respect for the tradition and culture from where it comes.
