Made using organic and biodynamic methods, Eureka is a wine that clearly reflects its territory. Rather than giving typical varietal notes, it expresses the aromas and flavours typical of this South-Eastern area of Sicilia. The Chardonnay grapes are vinified with the skins in steel tanks for the entire fermentation period (12/15 days). They then ripen in the steel until the following spring with continuous batonnage carried out according to the lunar calendar. The result is a delicate and textured white, beautifully and subtly fragrant, with a dry with a subtle acidity.
